Our hocks are naturally cured with natural nitrates. Specialty order nitrate free bacon is available. We do find the texture, taste and colouring of nitrate free bacon different enough that people prefer our natural cured hocks more. Recent studies are showing nitrate may indeed not be all that bad for you anyway. Our hocks have a healthy amount of Omega-3 fat marbling which provides superb flavouring and health benefits!
